Sugar Shack heating

So I purchased a new property last year and on it was a nice post and beam sugar shack. Those familiar with the structures know they are open high cathedral style with doors on the roof to let out steam. Great for summer to let the heat out but in winter when the temps have been hovering in the 20's average this is not good.

I added some old ceiling fans to keep the heat at lower level but that also just cools the place. I'm using a kerosun convection heater for now but will be using a wood furnace/stove style unit this up coming winter. Goals INSULATE to max and replace the three windows with inexpensive Low E when I can. Replace the man door with a insulated door and add a storm door for light and airflow with screens come spring.

So to get to the meat What should I do with the lift doors that let out steam? Insulate them or change them out to windows for free lighting in the day.
