Suggestions for building?

Hello. Am new to forum and need some opinions. Am planning on building detached garage. One question is, do most people permit these structures? Would like to avoid additional property taxes as well as permitting fees. But what are the pitfalls of building non-permitted?
Also, am looking at total costs per square foot to build. Will hire out various contractors for concrete forming and finishing, framing, etc. Have been checking out various online costs extimators for materials and labor and am curious to know what some of the members ended up paying per square foot of structure. Permit regulations and costs are highly variable, depending on where you live. In a web search, type "building permit and your county and state" and you will get contact information for your specific requirements. Call them and they will tell you size of building you can have, permits, inspections, etc.
