While back I built some shelves and a workbench (not shown), I'm thinking it might be a good idea to put up doors or something to cover the shelves to help keep dirt and debris off of the stuff I'll be storing on them (once I clean up the mess that's there now).

I'd like the doors to help protect and shield the items on the shelves but also still be easy to access any and all of the shelves when needed.

Any suggestions?

Not sure if I'm a fan of the peg board, but the idea looks good. How are the doors held into place, using some kind of C channel?

I used the same principlel as regguy. You can buy the nylon door track for 1/4 panels at most hardware stores. Mine are just glued to the shelf then panels cut to fit. They slide very well.

I got a huge pile of 16' uninsulated garage door panels twenty years ago. I have used them for pallet rack windbreaks, kennel roofs, temporary retaining walls, paint masking,

and 42 feet of workbench doors:

Window roller blinds work well in some applications. Most big box stores sell them.

For those shelves, I would cover the sides and then make four sliding doors out of 1/4" hardboard. You can make channels by cutting grooves into ordinary 2x4s. It's a cheap (and not-bad-looking, once you paint it) way to keep your stored stuff clean.

Cut the top grooves deeper so you can install/remove the doors easily.

You can see the sliding doors up top. I cut 1-1/4" holes in the hardboard to use as free, non-obstructing 'handles.'

I've got cabinets like that all around the upper periphery of my garage.

I beg to differ. I just went through the "searching for door track for 1/4" panels" ordeal and I couldn't find them at any of the hardware stores around me (HD, Lowes, Ace, etc. etc.). We have a locally owned "big box" hardware store here and they knew exactly what I was talking about but still had to special order them. I later found them on Amazon, but still felt good having ordered them from a local company for only a couple of dollars more. FWIW, here's the link to the tracks on Amazon:
