Are there any t-track or slot profiles that use commonly-available hardware and allow access so that new bolts can be placed from anywhere along the length of the track, not just slid in from the ends?

Lots of t-track are made to accept a 1/4-20 nut, but just from the ends. They are typically aluminum though so if you wanted to drill a hole along the front large enough to slip in a nut that wouldn't be hard to do, you just wouldn't be able to tighten down and use that small portion of the track where the hole is.

Edit: I also have t-slot router bits that will create a slot for 1/4-20 and 5/16-18 nuts that work rather well in hardwoods for light-duty and not a lot of repetition type uses. You have to first run a 1/4" or 5/16" dado and then follow up with the t-slotter, and just the same, drilling an opening from the front instead of out the end to place the nut would be rather trivial to do.
