I have 4 - 8' T12 lights in a 17 x 27 garage. I bought the high output fixtures that take the 110w bulbs. When I went to the Big Box store for bulbs I had a choice of 110w 4100k with a CRI of 60 the other choice was 75 watt 6500k with a CRI of 90. Is it better to go w/ lower wattage bulbs with higher CRI and K rating? Will a 75w bulb work in a HO fixture? Any advise is appreciated.

HO 96" tubes have different ends than a standard tube, not sure if the HO tubes are readily available in different colour temps.

Remove the cover from the fixture and see what the ballast shows. Most show the range of lamps they were designed run. If not, go the the ballast manufacturer's website and find their specs on your ballast (search by model number). In the event their website does not tell you what you need to know, they should have a customer service phone number you can call.

Neither of those is a very good choice IMO. I'd keep looking.

A 60 CRI is very low...everything I've seen says to go with an 85 CRI or higher...and the 6500k temperature is kind of eerie. I tried 6500k bulbs in my T8 fixtures and quickly went back to 5000k.

I don't think you will find HO lamps (tubes) for sale in a big box retail store. Try a wholesale house.
