Cover that bay with a removable cover so that you can easily open it up for additional work needed. I would put switches in for the 3 phase converter, air compressor, and the door opener power and locks. Consider indicator lights that remind you that the ____ is powered up and you have to go back in and turn it off.

Next to door:

3 switches for the three banks of florescent lights.
3 switches for the three banks of HID lights.
1 timer switch for the outdoor sodium flood light.
2 garage door opener switches.
1 open space for another switch which is not installed at this point.
1 CO2 fire extinguisher (big one.)
1 Paper towel dispenser/.

Other side of door:

1. Breaker panel.
2 outlets with GFCI (continues to the circuit that runs the ridge for the garage door openers and an outdoor outlet at the far end of the shop.
Telephone jack
Computer network jack
FM Radio Antenna wire.
Thermostat for heater.

I only ran a double switch box there for now. One switch for each half of the O/H lights. I know I want the O/H light switches right inside the door. You can always add more stuff later and the GDO wiring is a smart move.

The more important stud cavity to leave accessible is the cavity between the power panel and the ceiling. You'll need that cavity for running wires to any future circuit.

In my case (see the pic just above your post), I could not see putting the panel in a large section of wall elsewhere, taking up "valuable" wall space. The short distance from the roll up door to the man door was small and otherwise a wasted space, so I put it to good use. Being where it is, it also is much more difficult to "accidentally" block the panel with workbenches or equipment.

Switches for indoor and outdoor lights, remotes for the ceiling fans, garage door opener switches, thermostat, and a X-Box 360.
