You can get it done in a day. 5-6 hours
Figure a long/dusty day! Wear a dust mask. Also make sure your grinder has the proper self-cleaning/continuous running vaccuum. Shop vacs will plug up in about ten minutes and when you lose suction, its quite the dusty mess!

About how long should it take to grind 850 sq. Ft. Of concrete for a garage job? All that I can find is a 10” grinder. The floor is in good shape...

Depends. If it’s a hard-troweled Floor, could be a bear.
Consider adding water&weight if you run into issues.

Wear a respirator. Concrete dust is a big problem with your lungs.
