Building my first v-nose utility trailer out of an old heavy duty boat trailer. I'm keeping the main frame but need to add channel across for support. How do I go about figuring how many I need or what my spacing is. The trailer is 6.5ft × 14ft

Wood deck or steel deck?
I recommend wood and get it cut shiplap profile.
This will contribute a lot to the beaming strength of the whole trailer. [plus individual planks can still be replaced if damaged ]
For cross-members use 2" angle 3/16" thick facing flange down , and bolt the deck to it using "cup head" coach bolts [with shiplap you only need to bolt down one side of the plank]
space the cross-members 18" apart
For the outer frame use 3"x2" uneven angle with the 3"side facing flange up.
This will be strong enough to use as a car transporter as well as a utility trailer
