My experience I would never tape again I am still fighting getting it all cleaned up after it is hard as a rock. The tape is not wanting to come off plus I had to repaint the trim because I had to use a scraper to get some of it off.

As easy it is to remove trim and put it back on thats what I will do it I do this again.

Duct tape is fine to use and sticks better than masking or painters tape. Duct tape on the floor and masking tape on drywall is my rule of thumb. You should definitely pull tape when the coating is still wet. Plastic on the walls is only needed if you are planning on splattering (which you shouldn't) or are spike rolling a higher build system. Spike rollers will fling material whereas a nap roller should only smooth the coating.
