I picked up this changer today. It is missing some of the protector pieces and some of the trim plastic, also no manual. I have been looking around but I dont really see too many parts for this. Any idea where I can find stuff? Is this copy of Rhino or Ranger or something?

These guys own the Triumph brand.

Struggling a bit getting the rubber off the rim. I am not sure if I am breaking the bead enough. I have a hard time scooping the rubber over the head with the spoon. Any tips?

From the sounds of it you haven't changed tires before. Stick the spoon down between the bead, wheel, and foot of the machine, using your other hand push down on the bead of the tire OPPOSITE the foot. Push the spoon down and towards your other hand that is pushing the bead down. Should pop right up and over the the foot and you can then engage the pedal that turns the table. Hopefully I described that well enough.

You are correct, never did it before. Yes, you explained it well, thank you.

I don't have enough space between the tire and the wheel to get the spoon to hook under the rubber. I think I am not using the shovel deep enough to get the bead more down into the wheel and off the larger diameter edges? I think I need to push the bead more so that it is in one of the smaller diameter sections of the wheel. If so, I think the shovel needs some adjustment to do so. I will screw around with it again and see. Thanks!

You really should watch a few Youtube videos of people changing tires. There's some great youtube tutorials on tire changing.
THIS one is decent .. but there are plenty others.

When you break the bead, make sure that the bead is truly broken/loose. You should be able to push the tire down on the rim by hand, once you've broken the bead.

When mounting and dismounting tires, it's important to always have the side of the tire opposite from the mounting head (duck head), sitting in the drop center of the rim. On normal tires, you can do this by hand. On low profile and run flat tires, you'll need a bead assist tool, OR you *can* use your bar/tire spoon but you need to be VERY careful of placement.
