Unfold it like make it flat for cutting and bending or layout of tubing runs?
Personally I think SOLIDWORKS does a good job of making shapes flat for fabrication.
You can pick an HVAC design package that fits your budget and needs (this is what the fab shops I deal with that don't use SOLIDWORKS do).

I think the newer version (we are still using 2015) has piping layout capabilities or at least my brother used 2021 a lot for that.
Since we got a plasma table I have been cutting a bunch of pipe coping templates out of 20 ga and the sheet metal portion has been great. It has also done really well with broke parts. The only place where it I would say it isn't as great is it isn't as elegant for heavier materials (3/8"+) as whatever duct design software our primary fab shop uses does.
