Updating Dayton Thermostat

I have two Dayton overhead radiant heaters in my shop. They are controlled with an older style Dayton thermostat (pics attached). I would like to replace this with a digital heat only thermostat. The single thermostat controls both heaters and they auto ignite when the call for heat it applied. I’m assuming the kind of thermostat I need is a line voltage heat only thermostat? Anything special? Just unhook the old one and hook up the digital one to the existing wires?

This is a single pole thermostat, can I replace it with a digital double pole thermostat so that I have a true "off" setting?
