Using Paving setts instead of concrete

Has anyone ever used concrete paving setts for their garage floor instead of a concrete slab. I'm erecting a 9mx6m steel box section and cladding structure, then put the roof on it. This will allow me to decide whether to use a concrete slab or paving setts as the finished surface. The down-turn in weather has left it unsuitable to get a good finish on a concrete slab and I need to progress with the build.
The cars that will go in here are classic minis so not really heavy, no work being done on them in this garage. I can put these setts down under cover or a concrete slab later instead

If there is not really going to be any work in there I don't see why not. I would be reluctant to use a floor jack or jack stands on those but that's just me.

One thing I would concern about is roots from nearby trees effecting the floor.
If you were to do it I would want to put a 3ft deep root barrier around the perimiter of the building.

A couple of options.
You could put 3 inches of concrete down and not care amout the finish and then install tile over it. Or the pavers over it.

You could also put down 4-6" of base and do a 98% compaction and have a surface that is hard as concrete but still permeable so it will actually drain off any water that may collect in there

worked out some costs and concrete would be cheaper and speedier to do. At least I'll be guaranteed a better quality of concrete finish when there will be a roof and sides around it while pouring and finishing the surface

In the US those are sometimes called Belgian block. If made out of concrete they would be more cost effective than brick pavers but still probably more costly than concrete.

There are several threads about installing pavers. It is the same process. Proper base and compacting is key.

I can't think of any really good reasons why that wouldn't work. But I do tend to think that in the long term you would be much happier with a poured concrete floor with possibly an epoxy covering or at least some sort of tile covering.
