Ok - don't call me stupid

getting adhesive for VCT installation.

instructions say Porous substrate - 1/16 x 1/16 x 1/16 square - notch trowel

for non-porous substrate - 1/32 x 1/16 x 5/64 U notch

Concrete is ground and smooth.

concrete is porous - Correct?

why not use a bit more adhesive to make sure???

Concrete is porous. So are you asking if it would be better to use a trowel larger than the 1/16-1/16-1/16 square? No. Too much glue will cause problems by oozing out from under the tile. Use the trowel size that's recommended.
