Most I have seen are sitting on top of a smooth slab.
They are not set into any kind indentation.

Overhead doors, right?

Shop I once worked at had a Morton, concrete for all four overhead doors was 1 - 1 1/2" inches below interior slab. Kind of a sill/apron type of arrangement. It kept any chance of standing water or ice/snow from creeping inside under a maybe not so perfect gasket seal.
I've also seen this arrangement on some residential applications. It works.

I've seen it done, and I don't like the idea. What do you do when you need to install a new door frame in 40 years?

They say cement pours up to top of aluminum. Use expansion joints underneath and plastic on face to aid in future removal
