No personal experience here, but I'll list some thoughts.

Maybe use 4x8 sheets of plastic paneling? I know Menards and Lowes sell it near their bath stuff. It's probably about 1/8" think and fairly flimsy, but if you use green treat ply for backing, or maybe even the fiberglass impregnated wallboard that has the gray plastic layer on top (used for tiled showers), you should be fairly solid I'd expect. Good caulk on the seams, and maybe even a painted on rubber underneath the plastic panels?

The steel roofing stuff would look cool I'd expect. Though probably more expensive.

What you want may be a product called FRP, Fiberglass Reinforced Plastic. I have seen it used in car washes around here. I know Depot sells it.

water always wins. with that in mind imagine building a giant shower stall. take all the same precautions. Cement board, vapor barrier etc.. of course electrical has to be right for the application as well.

Have a friend who did exactlly what you are thinking of doing. Took 1 bay of his 4 car garage and turned it into a washbay. He built it with cement board and put FRP over that. Left a 16" space above and sealed it with 4 mil poly and installed a exhaust fan ducted out the wall. He`s had it for 7 yrs and no problems yet.
