I planning a water heater install soon and I’m thinking to use 304 stainless steel pipe ******* instead of the standard issue plastic lined *******. I've seen it mentioned in other forums that the plastic lined ******* are of questionable value and don’t provide a true dielectric connection anyway. My piping is tight so using stainless close ******* will save me a little on the installed height. Any problem with this plan?

Those dielectric ******* are useless. They are a direct metal to metal contact between the steel tank and copper plumbing. The plastic lining is just to prevent the galvanized ****** from filling up with rust and clogging.

Use the stainless *******.
