I've read dozens of posts here and did several searches - but I still can't find an answer - As long as I installed VCT during the warm months, what would happen to it come winter? 20-30 degrees F? Thanks in advance.

IF it goes through too many heating/ cooling cycles it will shrink leaving ugly black seams between the tiles.
This is also why you should never use very hot water to scrub vct.
