I’m planning on building a small table to mount to the side of my hot tub. Going to be about 6’ long made out of two 5/4 deck boards For the top. Just a small table to set drinks on while in the hot tub.
I need the inner deck board to flip up and lay flat on the outer board when it’s not in use to clear the cover and it’s mechanism.

I have a table from the resturants that uses these hinges flip-flop or look alikes... not 100% sure.. but they put onto the 1.5" thick MDF square table top that have a wings that opens and turns to a round table.

something like these.. old tech, not modern though. works.

****yea just don't clip your hands with those.. it hurts

If you don't mind the hump of a standard leaf hinge while the board is down, that will work fine. One at each end. A piano hinge would have the hinge above the boards the whole way. If you want to conceal the hinge a Soss hinge is a start.

However, I'm not sure a Soss will flip 180º.

Edit and note: Soss does make a 180 hinge. Some sellers are way out of line. I would suggest looking around some before clicking. Maybe the flea.
