What type of wire am I looking for?

I'm having a brain fart.

I'm looking for wire to use to use to replace existing old wires in several items like a range hood or vacuum cleaner, etc.

Single conductor, 16 and 14 AWG, stranded, and rated for at least 240 volts. Doesn't have to be high temp. Just normal wire?
I see lots of primary or lead wire but they all state 60 volts. Whats the difference between a wire rated for 60 and 600 volts? Insulation?

You're looking for THHN/THWN wire.
THHN/THWN is most often used for common applications like what you're asking, and is available at most hardware stores and big box stores. It will have a 600 volt rating, the difference is in the type and thickness of the insulation. The 60 volt rated stuff you found is likely for DC use, like in cars or on trailers.

Cool old stove, by the way.

There's lots of <50' spools going to scrap. Just got to get connected to the right people
I guess I'll keep an eye out for these people.
At least I know what type of wire I'm looking for.
