What wire for each location? Wet/Damp/Dry

I have searched all afternoon trying to find the correct answers to my application. Maybe I just do not know how to ask the question in the search engine.

So we just had a covered red iron steel building put up that is 20' x 40' (no walls). 20'x15' of the structure is enclosed with 2"x6" wood framing. the 25'x20' section is covered but open air and will be used for an outdoor patio / kitchen area. there will be an island that will have power, and the wall that is shared with the enclosed shop area will have power for vent hood, mini refrigerator, instant hot water, grill and burner top. All the lighting wiring will be in the ceiling on the open area, which will then be spray foamed, and then a metal ceiling will be installed. Lighting will all consist of 4" and 6" pancake lighting disks(LED) that are rated for wet locations. I want to be code compliant but not sure how to apply the different wiring types to the application for wet vs damp vs dry. The inside of the shop will have enclosed walls so not Sure if I need MC, NM-B, THWN (in conduit) UF-B etc. I am especially concerned about the transitions going from Dry to wet/damp areas. I do not plan on any exposed EMT in the enclosed area. I am open for suggestions as long as it will not get me in trouble with any inspectors. Location is East Texas. If I can figure out how to post pictures I will gladly do it if needed. Y'all are a great resource and I hope you do not feel like I am wasting your time. I have learned a lot by the hours spent reading different topics.

Welcome. I think you still need 5 posts before you can attach pics.

The internal wiring in enclosed walls can be as simple as nmb.

Hopefully, the floor is not poured yet and you can conduit under the slab to desired locations.

You may want to consider larger than 6" cans. What is ceiling height?

Slab is poured. I did run the conduit to the island in advance. There was actually no other place to run conduit, as it is an open covered patio. My big question is when the wiring leaves the confines of the enclosed area into the ceiling of the open patio area. would this be considered a wet or damp location even after the metal ceiling is installed.

I am not locked into the lighting disk lights. I guess I could use 8" disk lights. the ceiling height is approximately 12'.

This depends on what "open covered patio" means. I have a fiberglass deck on my first floor. It is waterproof and serves as the roof for a paver patio underneath. The paver patio has a complete ceiling made of vinyl soffit material. There are LED puck lights in that ceiling. It is wired with NM-B. No wires are exposed or visible. It is completely dry. The wire enters the ceiling space from the house wall. Nothing goes underground.

Do keep in mind conduit that goes underground is considered a wet location and you need THWN insulation in that conduit.

For the covered ceiling, I would consider it dry and simply use nm-b. #14 nm-b will be very helpful in wiring up the cans - no value in #12, just grief.

Also concealing the cables from sunlight greatly reduces any UV concern.
