I think some of them are designed to keep water from running into their electrical box. Like a drip loop in wiring.

Some of its looks, some of it is simply how tight you can bend the pipe. Remember, the originals use what is basically galvanized water pipe, now rigid conduit. If you want the reflector to not hang down much below the horizontal plane of the pipe, the only way to make the transition from horizontal to vertical and keep the reflector from hanging down is to do the gooseneck shape.
