I am moving a refrigeration cooler compressor at my daughters shop, it will be about 35 foot from the service panel, my question is do i run #12 or #10 wire, the motor draws 56 amps at full load.

56 amps will require #6 romex or #8 THHN copper (50amps), minimum with appropriate protection and terminations.

Good practice is 125% of what is minimum, which knocks you up a size

Please post a clear picture of the units nameplate.

More info is needed to help you with this.

The NEC has specific rules regarding refrigeration equipment, motors and the like.

Where are you getting the data? Hermetic compressors are frequently marked in locked rotor amperes & sizing to that will result in waaay oversized wiring.

I know this is an unpopular opinion, but if you have to ask this question you are probably best served calling a pro. ESPECIALLY considering this is a commercial setting.
