I've got a 60 foot run for the dryer and a 40 foot run for the range. My question is can I use 8-3 wire on both circuits? A 100 foot spool of 8-3 will cost about $120.

If I use 10-3 for the dryer, I'll have to buy a 100 foot spool because the spools only come in 25, 50, or 100 foot lengths. 100 foot of 10-3 is about $100.

I'm trying to save a little $$$ by running 8-3 on both circuits. I'm sure 8-3 is adequate for the dryer but is it big enough for the range?

As long as its 8-3 with/ground you should not have any issues. There is a peculiar rule in the NEC that if you upsize the conductors, you must also upsize the ground, which you cannot do with Romex (and I really don't see any need to do) since both 10-3 and 8-3 come with a #10 ground.

#8 will be extremely difficult to work with in the box for the dryer, but if the receptacle will accept it, go for it.
