First off I consider myself confident in all household repairs and fixes. Electricity keeps me up at night. My OCD gets the best of me with paints and texture, but that never killed anyone. I want to make sure this is done right.
OKAY:

I'm adding an outlet to run my garage refrigerator on. It's been out there running for a while on an outlet across the garage. Extension cord is getting mighty old dealing with it. I have an outlet on the ceiling for my opener and access to the attic in the garage. Above the outlet I found power in the form of two wires, one black one white, one day years ago while crawling over it. I nearly electrocuted myself. A hot wire just hanging out. I was mad and capped them. So I have power coming out of the back side of the outlet. I put in a box where I need it with a 15 amp plug. 12/2 wire with white to the silver screws, black to gold, and bare to green ground. I just left the other end disconnected so I could consult an internet genius before connecting the other side. That other side will be black to black, white to white. :headscrat
Am I doing this right?

black to black, white to white AND ground to ground, yes.
The wiring junction needs to be inside a box, in an accessible place, so don't just wire-nut it to the loose wires hanging out the back of your ceiling fixture. Pull the new one into the ceiling box and join them all there.
