It would work fine and should not warp. It would not stand beating on it too well, but I assume you wont be using it for a workbench top anyway.
Check local lumber yard/box store prices. I'm assuming you will have to pay shipping, so add that in.

You're better off going with a traditional plywood. That stuff doesn't have any cross grain ply. On a 48" wide panel, you will get a lot of movement. There's a reason why you don't normally see plywood like that. You could use those plys fine if you account for movement, but it's much easier to just get normal plywood. And cheaper.
Buy normal plywood. It won't move or warp nearly as much. Ideally, get one with as many plys as you are willing to pay for. At a minimum I go with the ~$40-50 sheets of plywood at Home Depot/Lowes. Those are your hardwood veneered plywood. Baltic birch is much better, but also closer to $70/sheet.
