I was a mobile aircraft mechanic for years, and kept my tools in a number of boxes small enough for one man to carry. I kept my wrenches in a roll (first a Proto, then a custom-made one with pockets big enough to hold 2-3 wrenches of each size) because it was the only way to organize them in those operating conditions.
When I changed to a fixed location, I put grommets in the roll and hung it from one end of a rack that I made to hold several of the small boxes. This way I have the tools in one spot, but still can pack them up and travel easily. Since I keep them at my home shop, I don't have to lock them up (just the door to the shop), which makes a difference.
I have a Craftsman box built into one compartment of my service truck, and I keep the smaller wrenches (up to 9/16) in a rack in one drawer. I am space limited, so the bigger wrenches are packed flat in another drawer.
I like the roll because I can locate and grab a wrench so fast. I can tell which pocket I want just by looking, and if a wrench hasn't been put back I know it at a glance.
