The shop is 40'x50' with a scissor trussed ceiling 10' at the walls and 17' at the peak. Walls are flat white and ceiling is white metal roofing. I plan on four rows of lighting placed at approximately 11' height. The desired work surface lighting will be 100ftcd. I'm assuming I need 200,000 total or 50,000 per row. 4 light fixtures per row spaced at 7.8' and 12,500 lumens should get provide even distribution. I'm willing to invest in quality lighting so the Lowes, Home Depot and Menards options are off the table. Should I be looking at ufo, square or rectangular fixtures and what good brands?

Your lumen calculations are low, probably because you used lumens per square foot as a measure. It doesn't work that way. Also, 100fc is a high target, unless you're running a pro auto shop or machine shop. You can shoot for 100fc, but dont be scared off if you only come in around 80fc or so. That's plenty. You can overdesign and add dimmers if you feel like you really need 100fc. I'm just pointing out your options.
You'll probably find a similarly sized building in the Lighting Layout Collection thread.
As far as square vs round, you'll find linear highbays will generally be lower cost than round, although both are effective. At 11', the round will put more pools of light on the ground than the linear will. Bottom line, linear will be better for this application. Quality manufacturers are Atlas, LSI, RAB, Lithonia, Eiko, LEDvance, Signify, Cooper. Good choice to stay away from the no-name internet stuff.

I do have a machine shop area. I also weld, assembly and other tasks that require bright lighting for my old eyes. I'll look into greater lumen output and maybe dimmer circuits. I've thumbed through the lighting trend. There's a lot of info all over the place which I find frustrating. That's the other old part of me. The research continues.

I've got 12 8' Lithonia LEDs bought from Lowes, hanging at 12' in my 30x40. My electrician is finishing up now and I just walked by and saw the lights are on inside (happy days!!!! [emoji3060]). Using the stuff I learned over in the perfect lighting fixture thread I think I was getting around 86fc at a 30" work plane with my setup. More to follow shortly on if that seems adequate!
