I need an M16 x 1.25 pipe thread tap for a temp sensor in an oil pan. I just can't seem to find one on google. Is a metric pipe thread tap an oddball item or am I not looking with the right description?

1.25? You sure on that? M16x1.5 is a thing. For 1.25,i think you are looking at a straight tap, so it would need a sealing feature. Does it have an o ring?

One time I had to find a big metric thread for a water main pressure tester ......really urgent as city council engineer was coming ......anyhoo ,it was list as 32 mm somthing or other in the documents .......couldnt find one anywhere ,or anyone who had a clue.......then I thought its looks like a bigger garden hose size , and it was a common hose and garden fitting.

Unless something has changed in the last 12 or so years, yes. I used to be in charge of the fastener supplies for a large R&D facility before retiring. BSPT is the standard for tapered pipe threads in Europe and Asia. BSPP (British Standard Pipe Parallel) is the standard for straight pipe threads.
