How to hardwire an under cabinet light?

I would like to hard wire a light on an outside wall with blown fiberglass insulation. I want to add a double gang box where there is a single, and add a switch and power it from the outlet next to it. The part that I’m hung up on is where to drill the hole to pull the wire to the light. Should I drill hole in the Sheetrock and run the wire under the cabinet to the light which will be visible, or drill hole in the back of the cabinet and run wire inside cabinet to center of the back of cabinet and drill another hole to the light?
I live in the country and no inspiration or permits needed. Hope photos help explain what I’m talking about.

Then if you decide to do anything else later such as lighting on top of the cabinet its all nice and clean on the inside to plug into

I mounted my undercabinet lighting about as forward under the cabinet as possible. I then drilled a hole just large enough to pass 14/2 through the bottom edge of the cabinet and pulled it through, allowing the light to be hardwired. You can see this in the picture. (Nevermind the drywall being cut out as this rookie stubbed out his electrical to low under the upper cabinet and had to repair drywall too...)

I thought about going through the back of the cabinet, but I didn't want a wire getting in the way of putting stuff in the cabinet. Probably not a problem either way, just personal preference.

We had ours installed inside the cabinet with all the plugs wired to a switch. Then we used a smart plug and some LED light strips for the under cabinet lighting.

Those fixtures don't appear to be made to be hardwired. How do you plan on making up the connections?

Thanks for the suggestions. Plan to go into the back of the cabinet.
The light I’m using from HD $20 has a knockout in the bottom for hard wiring. Just unplug the wire in photo.

I didn’t know there is a shortage of gang box’s. Local Lowe’s and HD have very limited selection. No double old work boxes

Easy. You dont need to add another box unless you need the outlet. Here is what I did.

Yep there was a supply issue with the basic Carlton old work boxes. Just found them in stock again a few days ago at my local HD. Just be patient.
