Wouldn't a lift like you posted require digging a pit for the rams? I had a drive over scissor lift like tire shops use that was real useful and I would just park over it/use it as a table

When you wire the outlets do every other on a different breaker. It'll be more wire but then you don't have to worry as much about overloading a circuit running equipment

Why not just a battery (or connection to tow vehicle) and an inverter for that little bit of use? Or just some 12 v led strip lights?
