Another vote for PEX. I reworked the entire house in less than 2 days. Of course I had the benefit of openings in a few walls thanks to a kitchen remodel, but the overall process was super easy. I also used the Wirsbo setup that expands the tubing over the fitting.

End wall verticals are about 5" short. One piece was the correct length. Emailed them last night and had a phone call from them at 6:30 this morning. They are going to recalculate lengths and make new pieces.
I've started setting up switches and outlets controlled by my Amazon Echo. Works great through the Alexa app on my phone and through voice controls on the Echo. I'll have the shop lighting and door locks controlled through it when I'm done with the build.
