If it’s a servo motor there is a switch on it to slow the speed. They do make needle positioning servos where you can really adjust the speed and do just one stitch at a time.

why not use Evernote? You are not limited to notebooks. can add different pages for different projects of a vehicle. can add pictures, and just about anything you need and it keeps it all organized really well.

My ideal table setup would be 2 tables, one for sewing and layout and another for seat disassembly and re-assembly. The general sewing table would be like 8X15' and would 2x4 legs and bracing with a 1' top with formica. the sewing head would be routed into the table with no separation...
this is how I have done them.
First I really clean it up so that the bondo and my glue will stick.
add bondo
sand smooth and apply foam. I had left out how to fill in the hole but i had used chipboard and foam to level it.
and finished with a sewn up vinyl cover all glued down.
