Finn, I am not a metallurgist but in multi millions of dollars of gym equipment is my personal experience. The shipping containers of Chinese metal gym equipment bends/rusts/ and breaks 3x faster then American metal/equipment of the same thickness.

My craftsman box, i believe is good quality especially for the price. Mind you I'm a shade tree mechanic who takes care of tools and equipment...except 10mm sockets!
You are over thinking it because of cost.
1. Do it. Pay the pro and enjoy.
2. I do recommend wrapping house wrap around building before spray foam just in case you have to replace a metal panel. But it's not a issue if you can't, just harder to panel a damaged panel.

Craftsman boxes are American made. In Missouri. That was the only box I could find American made so I bought it.

Cmu[block] let's air and moisture through it like a straw. You really should go with closed cell foam on the inside and moisture barrier paint, bare minimum, on the exterior.
