Why not just make a box on part of the sloped ceiling to accommodate a minisplit? I don't recall any requirement for a vertical wall to be below the head. If you have the height you can make it its own straight wall section.

They do sell under-deck gutters you could use and make that whole space rain-free. Usually called under-deck ceiling systems.
