Lowes does carry the Mr Heater universal vent kit which works with 45k-75k btu. Not sure if they are stainless but it is complete with vent, thimble, pipe, etc. Lowes.com shows $94 and is in stock locally for me anyway.

I really like those Lowes quad T-8 fixtures. The ones I picked up had a nice Sylvania universial input ballast (120V-277V) and have power factor correction to 1.0. However since you have open rafters, reflectors would be nice.

That's a good point about air seal that I hadn't fully considered during the heating season. I've used a vapor retarder faced insulation but that really isn't much of a seal by itself. I'll have to give that some more thought.
