That's exactly what I did for insulation after closed cell between the studs. You're going to enjoy the heating and cooling efficiency better then your house!

That closed cell foam will make a big difference, plus become an excellent sound deadening barrier. I utilized this with my rec-room two years ago, boy does it make a difference, warm it the winter, nice and cool in the summer.

Man I love these old school looking garage builds! Great find with the garage doors, hard to duplicate that weathered texture by hand. My wife would be proud, she's a designer/remodeler, and loves that color pallet you've gone with.
