The rear diff is the recommended center jacking point on the BRZ as well as on my old 2002 WRX. At least for Subies, that's pretty standard procedure and the recommendation on all the Subie forums I'm a member of.
When I jack the car up to put on jack stands, I use the center jack points on the car. There's a jack plate on the front subframe and the rear diff is used as the rear jack point.
I'd rather not risk using a product that was not designed to hit the jack points on the car because those points...
Wow. . .I was hoping to get this, but at 50.5" for the jack point width that won't work on my BRZ. I just measured it and it's at about 60" from center to center jack point. Very disappointing.

For the bikes, can you install some concrete anchors in the floor? You can then chain the bikes down to the anchor. Preferably, put the anchor in the corner so that it doesn't give thieves any room to try at the anchor point. Motion lights and cameras as others have suggested as well.
I did half the floor at a time. Once the first half was dry, I moved everything over, scuffed the edge and then did the other half. You can't even tell that it was done one half at a time as it looks seamless. I used EpoxyCoat and that was their recommendation as well.

That's pretty much a personal decision based on factors such as your height, arm reach, desired space above bench tops, etc. I mounted mine so that I could reach the top shelf without issues, but I don't have a bench underneath to consider.

Have you tried angling the car to give you more room? My old WRX was lowered and I would have to take everything at an angle to clear. Other choice would be to build some ramps, i.e. inverted triangles, to give you a shallower angle.

Agree with everything stated above. I used 1 full kit to do 361 sq. ft. and I used the entire kit. I put it on thick and it looks great. 720 sq. ft. is really pushing it and if it's too thin in some areas, it's not going to look right.
