If you are able to keep the garage door closed and heat the garage up a bit with a spacer heater than you should have no issues. I applied my epoxy floor down when it was in the high 50s about a week ago and had zero issues.

If it were me, I would finish it with 1x(whatever width needed) that will bring it out to be even with the sheetrock. You could always use sheetrock, but I don't care for the 1/4" round or shoe molding that would be used to trim off the edge of sheetrock that touches the window frame. I have to...
