Yes we thought of pellet stoves but we have 30 acres of bush, with a practically unlimited supply of wood (pine/fir/poplar/birch). It seems a crime to buy pellets when I can walk outside and there is a lifetime supply of wood. Maybe as I age or get tired of processing wood we'll consider one.

A mitred joint would be the best, most unobtrusive. Any thing else will draw your eye to it. One trick I use is to point your mitre away from your view, so the joint blends with your line of sight.

Those look like metal doors. Metal would not usually be a custom size. If I'm you, I'd measure the height and width of the doors and head down to your local big box store and see if you can find duplicates.
