I would use a tapping saddle, you can get them from Ferguson or Northern Water Works. Relatively easy to use and will get the job done properly.

I would not cut on your lift, This will create more problems down the road, You would be better off renting or borrowing a fork lift to help with the lifting and yes I would just replace them all at once.

Its all a matter of opinion and In mine I think a two post is the best if you are adding to an existing garage but if not than a for and aft is the way to go. I can help with schematics if you are interested in going that route. Just be carefull with some of the 2 post lifts coming out of China...
