That works for inner panels, outer panels think ridge caps, roof to porch transitions etc are more of a problem. Even with a screw the cap, foam and into the rib and board underneath, they walk out.Usually there's something to screw to where you'd have an under or over closure.
Screw through it.
Have a hammer tacker handy for under closures to keep it in place before you drop the panel on it. I only put one down at a time so the "timing" doesn't get away from me, it's easy to stretch it out and chances are you will putting down 3 or more ahead of the metal.

Usually I just shove them back in with some silicone on them, I may look into the rolled stuff. I live on a REALLY windy mountain, and if those aren't in it blows water up the roof, and into the ridge. (It's a 6/12 pitch roof)I'm not good at speed reading!

I've had some tails, (closure strips) beyond the last screw behave like you describe. Screwing at every major rib is about all you can do short of the venting roll type of closure.
There's probably an adhesive that you could use during installation but I don't have any suggestions for after.
