Put up drywall and blow in cellulose. You can make your own cellulose insulation from old newspapers and Boric Acid powder by feeding those ingredient into a Hammer Mill.

^^^^ This. Those trusses are spaced out a lot for an enclosed ceiling.

At least Fabral has span table data to 8'. These looked to be 6'? Check on truss design - should be on drawings - and see how much cellulose it can hold.

Verify weight limit for the trusses but first options I think of are metal liner panel with blown in above or look up insulation options for pole buildings as they often have wider bats that work better on larger spans like you have. You can then cover with liner panel or leave uncovered as long as the insulation is properly attached and not a fire hazard.

My builder installed metal ceiling panels and then blew the insulation in. I had him make two 3 by 5 access holes near each end (just in case). He used batts to insulate these areas. Trusses were 5 foot apart and 36 foot long.

When I did my building, I had the trusses constructed for the anticipated ceiling load. I added the ceiling joists between the trusses, installed vapor barrier, sheeted it with metal, and blew in fiberglass. I have been very happy with the results.
