Got held out on a lot of other things...Here's an update spent 4hrs today pulling the rest of the drywall down, moved the doorbell transformer and box up on the wall.
Extended the platform, reinforced with vertical supports for the existing ones the builders did...

Decided to leave part of the wall at the top so that way the heat pump water heater is not just pulling cold air coming directly out of the mini split next to it. Some level of partition...and then I also didnt need to do extensive relocation of the doorbell transformer either and can keep it essentially where it was before.

How would you guys recommend I do the pressure relief copper lines - Remove the 90 and go up the wall where the existing gap is and come out the top straight over, or leave as-is where the builders put it and just do the same design it has now but tucked closer to the wall?

ps2cho: Like others have already mentioned, you need to think load-bearing instead of structual. There is bit of difference. Good luck.

Thanks for the clarification ..... it's already down and clearly not load bearing structural or anything other than a means to prevent inadvertent contact with the water heater. Not that it would stop a vehicle in any way but that's a different story.

I'm not real clear what was clarified....
