This past winter was pretty mild for us here. I was able to get the floor poured in November and then carry on through the rest of winter with the build.

I got the metal roofing down in Phoenix at Western States Metal Roofing. It's cold rolled steel, it will rust to a nice orange color eventually.

East of there. Unfortunately we can't see the Ute unless I stand on the roof or go to the far edge of the property. It has such beautiful sunsets.

By March I had the framing and electrical done. Wiring is pretty conventional except UF-B is needed in the walls.

Very nice OP. What R value are you shooting for?, R40 or higher. Thats a ton of effort and reduced floor space to compensate for 3-4 months of oven temps.

And how are you going to deal with the attic space?

The walls will be 12" thick plus another inch of plaster on the inside and outside. The light clay straw will give an R-value of around 1.75 per inch. The clay in the mixture adds thermal mass as well. The Larsen truss framing eliminates most all thermal bridging and sound transmission.
The ceiling will be six inches of Rockwool about R 21. I'm just planning to be able to easily heat it in the winter and keep it around 80 or so in the summer without AC. I did similar construction on our house but 14" walls and R36 in the Ceiling and it stays very comfortable year round.
As far as reduced floor space I just designed from the inside out.

The last couple of months I've been working on the light straw clay infill. The straw is ran through the barrel mixer with a clay slip which is a mixer of the native clay and water. This coats the straw with the slip. The straw is then packed into the wall cavity using sheets of OSB temporarily attached to the wall framing. After a couple of hours the forms can come off. Once dray this clay coated straw mass forms a surprisingly firm wall.

I'm finally done with packing the walls with the straw clay mixture. Next comes windows and trim, then stucco wire inside and out.

These are some antique windows that came out of a house in Delta, Colorado. The house was built around the turn of the century. I bought the sashes, then built the frames in my new shop! So nice to be building indoors again. Even in an incomplete shop.
