My girlfriend is having a 16x28 outbuilding put up, stick built, spray foam insulated.
She wants to have a dual zone Mitsubishi Mr Slim installed. Seems this unit sells online for around $2700 with a line set.
Estimates are coming in between 5500-8500 for the unit and install.
Electrical will be done before they arrive. Seems like crazy money to me or am I missing something?

As has been said, two separate units are usually cheaper than a dual head system. Is the outbuilding divided into two rooms? I installed a single zone mini split in my 24x25 garage, and one head is fine.
That is crazy expensive for the install... $2800 for labor at the least, probably more because the contractor is going to get much better pricing on the equipment than anywhere you can buy it online.
If you want to try to maintain the warranty, and save a bunch of money, you can do everything yourself except flare the lines, hook them up, vacuum and start up the system. Just get everything mounted, wired, and the line set ran with a little extra on the ends so a contractor can cut the ends and flare them.
I found the math was the same as you mentioned, you could buy a spare for what people quote to install these things. I've installed a couple of them myself, and the money saved more than paid for a nice vacuum pump off craigslist, a bluvac micron gauge, flare tool kit, and an appion core remover/vacuum tee/ball valve tool. I know contractors have to eat, but I'd rather save a bit of cash and end up with a bunch of tools.
