I got the line drawing and offsets from Eric about 6 years ago and starting lofting it last fall.
Today got the floors filleted

Sounds like a solid plan.I need to do this on the boat I'm building. Our intended usage is tandem rowing, with my wife and I. I'm going to finish the outside, then do a brief launch with the interior unfinished. My wife and I will sit on temporary thwarts, with an observer making note of fore and aft trim so I know where to permanently fasten the thwarts. I'll also check the trim with a solo rower, although I assume the designer put the central thwart where it belongs.
