Is there anything recommended to cover OSB that would smooth out the bumps? With the warmer weather I plan to start painting the inside of my shop.

Skim coat it with drywall mud. Fast, cheap, easy.
Your best bet is the drywall mud then. It is a bit of a PITA to get it to look just as smooth as drywall tho.I did put drywall in most areas. I put up a few sheets of OSB where the wall might get bumped occasionally. Just trying to make the wall look similar.

It's not horribly hard. I had to do quite a bit of skim coating in my current house. Buy a bag of the fast-set drywall mud. I like the 90 minute stuff. Lay it all on with a fairly wide putty knife. Then when it's dried, first scrape off any high spots/runs with the same putty knife then use a palm sander with a dust collection system attached to a wet/dry vac.
