I changed plans for heating barn. put stone in for 5inch concrete slab and heat with wood stove or other options. Now I am going for infloor radiant heat. Digging down the side between post is a pain but needs to be done,. along with excavating out 7 inches of stone. Should I run the 2 inch foam board from top of skirt board down 12 inches, or where the top of concrete will be on skirt board? Any suggestion to make it easy would help. I like easy.

I had the exact situation, 5", had to remove stone, etc. Except my skirt board was different because I have bookshelf girts.
But you're actually supposed to dig down to below the frost line. 4' here, not quite sure how to do that. Or put wings out the side several feet. I made it down 18"-24" & decided that was good enough. Put wings out 2 sides.

Most people cut the foam at 45° at the top & put it at the level of the concrete

Edit: as for suggestions to make it easy, I made my athlete son do most of the digging. Crusher run then clay. Used a pick axe, trenching shovel & garden hoe.
