You could run those hookups off a 100A service without a problem. Would still have enough for lights, odds and ends in the building. If you want to condition the building that could be a factor. Big A/C would take some power.

Get the 8000 alloy aluminum. It bends easier than copper even though it will be two sizes bigger

Aluminum bends way easier than copper. Keep it all aluminum from start to finish. There would be no advantage to switch to different conductors. I would talk with a HVAC contractor to see different options. Are you considering heat also.

Heat not so much. Hate the heat with humidity in the Summer My 40x60 shop is fine in the Winter.45- 50 degree is fine for me.
